I freakin’ love brunch. Waffles, Bacon, Mimosas, nomnomnom…. So I decided to throw myself a birthday brunch last weekend, and invited all my Terrific Lady Friends! I had all these adorable ideas about doing it outdoors in my backyard with the flowering trees and bushes, and big clear balloons filled with confetti! Well, of course it rained and was miserably cold and windy, and then I found out it was going to cost $10 a piece to fill those big clear balloons, I was crushed. I know, first world problems. But I packed up all the food and decor, trucked it over to my sister’s arguably nicer house and threw the party anyway, just indoors and without giant balloons. Once the mimosas were flowing, no one gave a damn. First rule of Party Planning, always have a Plan B. Second rule of Party Planning, never forget the champagne.
For the menu, I went with classic brunch faves:
- Belgian Waffles (with an assortment of toppings)
- Strawberries (duh…)
- Mascarpone Whipped Cream (see below for recipe!)
- Hash Browns (from a bag!)
- Bacon (because… bacon…)
- Cucumber-Salmon Tea Sandwiches (see below for recipe!)
- French Macarons (from Trader Joes!)
- Almond Danish (also from TJ!)
- MIMOSAS & BELLINIS
The food was very much “semi-homemade.” If I don’t have all day to prepare for a party, I usually do a bit more pre-made food so I don’t have to wake up at 4am to start cooking. I bought a lot of the items from Trader Joes because their shit is delicious and affordable! I did make some amazing whipped cream and super easy tea sandwiches, both of which I will share the recipe for at the end of this post! My sister made our family’s traditional “Lamb” Rice Krispy Treat. It was an Easter tradition for us growing up, but since we don’t celebrate Easter anymore, it’s become a Spring/my birthday thing. The Lamb is super easy, just make a batch of Rice Krispy Treats and shove it in this Nordic Ware Spring Lamb 3-D Cake Mold. We ate entirely too much and we polished off something like 6 – 8 bottles of Prosecco.
As for the decor, I didn’t go as big as I originally planned, mostly because of the giant balloon situation, but it was still cute! Tissue Tassel Garland, Tissue Flowers, and some faux Peonies arranged to sneakily tie down the bouquet of (normal sized) balloons.
All in all it was a fun day. A+ Birthday, will brunch again. Even if things didn’t go exactly as planned, it was still delightful. I think all a good brunch really needs FRIENDSHIP AND CHAMPAGNE.
Mascarpone Whipped Cream
This is mega easy if you have a stand mixer or power mixer.
- 1 pt Heavy Whipping Cream
- 8oz Mascarpone Cheese
- 1 tsp Vanilla Extract
- 1/2 cup Confectioner’s Sugar
Cream the Mascarpone Cheese and Sugar together with your mixer, add the vanilla and the Heavy Whipping Cream and turn the mixer up to medium speed and whip until its fluffy tasty whipped cream! This makes great waffle and cake topping or dip fruit in it! Yum!
Cucumber Salmon Tea Sandwiches
Another mega easy recipe here, and your friends will think you are oh so fancy!
- Tasty, Soft Whole Wheat Bread
- Salmon Cream Cheese (I used Philadelphia)
- English Cucumbers
- Smoked Salmon/Lox (optional for extra fancy folks)
Slice up your cucumbers nice and thin. Spread that lovely Salmon cream cheese on your bread, don’t hold back! Layer in your cucumbers and Lox if you got it! Maybe add some capers if you are feeling adventurous. Slice your sandwiches into quarters and serve!
